I do like green beans. I have a few dozen bags frozen and 3 dozen jars canned so far and they are still producing more. Got to pick some before the rain tomorrow

Pressure canned with one teaspoon of salt per jar. I cold pack them then add hot water then 20 minutes in the pressure pot.

We canned green beans for a couple weeks. Wife pickled a bunch too. She made some spicy and some dill. Both have been pretty big hits. Got the idea from a fella on here. Worth trying IMO.

We canned sweet corn this week. Nothing beats garden fresh, especially when it’s your garden.

Our green beans are about done. Pretty good yields this year. We have gone to blanching and freezing almost all of our veggies that being beans, Brussel Sprouts, cauliflower, carrots, beets, broccoli, asparagus and sweet corn. I have gone from freezer dills and bread and butter pickles to canning those along with the relish. Tomorrow it will be slicing the cabbage for kraut. I have 4 nice heads and that should be enough for me. I put it in a crock and give it time and then can it in jars.

When did you get your garden in? Mine was almost three weeks late. Cucumbers did almost nothing.

I planted the potatoes, first corn patch, first onions, peas, beets the last days of April. I planted the other garden about 2-3 weeks later about the 20th of May. I have done some later planting also. For us I have never had such rapid growth of our garden as we have this year and I was actually a few days to a week later than I normally am. I had a 60 day variety of green beans I planted about the 25 of May and they are almost done as of today.
I planted two patches of sweet corn about May 20-15th and it was out of the ground in 4 days with the heat we have had. I am concerned about my tomatoes as there are hundreds of green tomatoes on the plants and some of the lower branches are dying off. I set those out May 20th and the plants were about 6-8 inches tall and there are tomatoes ripening right now. Typically I plant about a week earlier and I have my first ripe ones about August 10-15th. I date all my lids of the canned tomatoes. Last year my first canned batch of salsa was August 21st. My last was early October.

I expect my first harvest from my beans in 4 or 5 days. Planted Kentucky wonders and holy cow are they ever loaded. Which is good cause a can of dill pickle green beans doesn’t last more than a day in our house lol.
