My smoked salmon supply has dwindled down to nothing, so I figured it was time to do another batch. I put it in the brine last night, dragged out the Little Chief and a bag of alder chips. Smoked it all day long. Now I have enough to do quite a few smoked salmon cheese balls for the conventions....

oh the memories! 6 month tdy at king salmon Afb in alaska! did hundreds of them, smoked and canned!

Unless it is smoked.

At the NTA this year, my wife and I stopped by Paul's booth to meet him and to buy his newest book. While we were there, Paul offered us some of his smoked salmon cheese ball and crackers. It was great and the best either of us had ever had. I only wish we had fresh salmon in Iowa, so we could make some of the Dobbins cheeseballs too!

I used Hupurest's recipe. I don't know if he wants it given out. He use to supply me with smoked salmon, then I wanted to make it myself, so I asked him for his recipe.
