Please share your recipe as we are headed to the coast next weekend and if the tuna are in we'll need to can some .
Ours will be albacore and if lucky maybe big eye or blue fin

Wide mouth jars are easier. Fill jar to 1/2” from top with tuna. Nothing else! Can at 11 lbs for 100 minutes. Do not run water over canner to cool it. Let pressure fall, remove jars to a rack.
No salt, no oil, no water. Finished jar will be half full of natural liquid. Will keep for at least two years. I put 1/4 tsp salt in a half pint jar of albacore but no liquid.
