Canned about 36 pints of tuna this weekend. That is about a year’s worth of tuna salad for us. Also froze 30 lbs of shrimp and chopped 9 quarts of chowder clams. Broke now but will eat good this winter.

Always wondered if the juice in the tuna jars would bait coons. Our dog would go nuts whenever we opened a jar. Only ingredient is yellowfin tuna.

Please share your recipe as we are headed to the coast next weekend and if the tuna are in we'll need to can some .

Ours will be albacore and if lucky maybe big eye or blue fin

Wide mouth jars are easier. Fill jar to 1/2” from top with tuna. Nothing else! Can at 11 lbs for 100 minutes. Do not run water over canner to cool it. Let pressure fall, remove jars to a rack.

No salt, no oil, no water. Finished jar will be half full of natural liquid. Will keep for at least two years.

I put 1/4 tsp salt in a half pint jar of albacore but no liquid.
