What are you doing with them here? Looks like you're grilling them... then what.... freeze? Does cooking them first do something better than just freezing them uncooked?

Chanterelles.

That's a 36" flattop griddle.

Melt a stick of butter and then cook them down to get rid of the water. I cook them about half as much as I would if was preparing them fresh to eat. Then I vacuum seal them in bags with 4 ounces in each.

I never tried freezing them without cooking them down first.

Thanks. I harvested chants for the first time ever this year. I only picked enough for us to eat a few times. But after these hurricane rains come through I bet they'll be popping up again. Maybe I'll find enough to freeze some.

Been so dry here don't need a dehydrator! Recent soaking rains should get them popping.

We ended up with about 20 pounds of cooked down vac sealed mushrooms.

The crazy party of it is that we didn't really even touch what was there. It's on a property we own and we collected a 19 gallon tub full. We could have filled a couple more like that. We've really got a honey hole.

We'll have mushrooms at least once a week for the next year and plenty to share with friends.

It's quite the blessing we have. Thanks be to God.

I dehydrate the turkey tails and grind them. Store the powder in jelly jars.

They are supposed to have lots of medicinal qualities, boost immune systems and some say even help with cancer treatment.

Just toss a bit of the powder in with whatever you're cooking or use it to make a tea or tincture.

They don't look right to me. There are many varieties and I'm certainly no expert on them. To me the stems don't look right.

The variety that we harvest are a nice yellow orange color. The stems are not well defined. And there are no gills on the underside.

I know there are the lighter more brown varieties but I'm not as familiar with those. Maybe someone else can chime in on this one.

When we gather mushrooms, if we're not 100% sure, we pass on them.
