Ordering a kit. Going to try making some mead. Anyone have any specialties?

I made some dandelion/honey mead this summer. It has been bottled for about a month and a half. I have not tried it yet.

Haven't made mead in a while.
Use to bottle it in champagne bottles
Would try it after a year but never got real good till aging hit two years

My brother makes in once in awhile but does it in 8 gallon kegs. He once made peach mead and "lost" the keg for over a decade. That was some of the smoothest I had ever tasted as it was just like peach juice right out of the can, but you didn't want to drink too much at once as it would hit you like a freight train!

I don't know enough to make any recommendations but I know some great mead makers in my area.

All that stuff is too sweet for my tastes, and if you dry it out it tastes like doggy doo.

While I love American mead and have made a few batches myself, traditional Polish mead, miod pitny, is the best. Very high honey to water ratio. Very sweet, very smooth.

Good or bad just bottled our first batch of honey mead from seconds honey from last summer. It turned out not too sweet and tastes potent but has a slightly bitter after taste yet. Not a wineophil but will age it for awhile to see if it smooths out after taste. Have three batches(different recipes) of maple syrup wine going from last of season sap. Always looking for ways to make the most of "gathered" food.
