I’d be in heaven there. I could eat smoked pork ribs every day! I smoke a a few sets about every other week. Glad you had a good time

Whole slab spare ribs, membrane pulled, no rub, hickory only, sauced last ten minutes.
Sometimes less is more. Agree 100%. I usually just do a dusting of rub on ribs. No sauce at all.

The World Championship Goat Meat Cook Off begins in Brady, Texas today and will run thru Sunday afternoon.
They limit entries to 200 teams and always have a waiting list.
There's way more hang overs than 200.
Sit on your horse on top of a ridge, look out across the country and tell me there is no God.

I would eat until I could eat no more there. I love good barbecue. I was fortunate to have a World Champion pitmaster grow up literally next door.
Was Little Nick's BBQ and their Boar's Night Out crew there? I've known Thad, who owns and is the pitmaster for Little Nick's all his life. I saved his life around 30 years ago. Thad and his team won the 2019 American Royal BBQ Competition in Kansas City, culminating in an epic win of the 2019 Pigapalooza OBR Cup Whole Hog Championship.
Thad's family built cinder block barbecue pits about 4 feet from my backyard. They barbecued whole pigs, turkeys, chickens, ribs and hams frequently. They cooked amazing amounts of very good food for my graduations. Once they had a disaster and 6 whole turkeys fell into the fire when a cinderblock collapsed. They would have parties, during the Cool Jazz Festival in Cincinnati, where several hundred people came and ate over the course of the weekend.
My dad at first hated the loud music, which they played until 4:00am. After the second Cool Jazz Party, my dad went out and bought a lot of the records.
Thad's parents, Big Thad and Carolyn, taught my brother Nick to cook very good barbecue. Big Thad resembled a more muscular George Foreman. I saw him knockout a racist with one punch once, breaking his jaw. Big Thad would catch adult groundhogs by hand, grabbing them when someone else chased them to their hole.
Your post brought back a lot of great memories for me.

Thad's family used Lucious “The King’s” Barbecue Seasoning a lot, with a little Coke. It was very good. I can't buy it around here.
In rubs, I use Slap Your Mama and Tony Chachere's Creole Spices when I grill. I mostly grill on mulberry, but sometimes use apple, pear, peach, grape or other woods too.
I like barbecue sauces too. I mostly use Sweet Baby Ray's and Montgomery Inn barbecue sauce.

Best ribs are the ones I smoke. lol I like spareribs, pull membrane off, rub some olive oil on them, add a little salt and pepper, than some Killer Hogs rub and than smoke for about 6 to 7 hours and lightly sauce at the end.
