2 lb's Great Northern or Navy beans, soaked over night change out water 2-3 times.
several large sliced onions a lb or 2 of carrots cut in chunks a head of celery sliced to bite size a light palm full of black pepper
bring to boil, then reduce to simmer till beans are soft as you like them. or, place on wood stove in the am for supper
large pan of buttered cornbread
Loosen your belt for 2nd's.

Quick and easy one here, and is very tasty.
1# beans sorted. I mostly use pintos, but any bean works. Soak overnight and change water at least once 1 large onion - diced 1# good thick bacon (I cut the bacon in 1" peices) - your smoked hocks will be even better 2 cans rotel tomatoes with green chilies (Can use the hot rotel if you want it a bit more spicy) Lots of garlic powder and salt/pepper to taste. I also like to dash it with whatever a favorite jalapeno season is for you.
Soak beans overnight. Combine beans and all other ingredients in large crockpot and put on high. As soon as pot begins to bubble, reduce heat to low and cook some more. About 5 hours and done with my crockpot. Very cheap, quick, and yet very good. Chancey

Mama's recipe
1lb dry black beans picked sorted and soaked in just enough water to cover. Put on to soak well ahead of time. 2 large smoked hocks 1 large onion diced 1 large bell pepper seeded and diced (can substitute equivalent poblano, hatch, etc) 6-8 cloves garlic minced 2-3 bay leaves Salt/Pepper to taste Dash cayenne (optional) 1 bunch cilantro chopped (optional) 1 mild or sweet onion diced (for serving) Sour Cream (for serving) Cooked parboiled rice for serving
Saute onion and pepper in olive oil. Add bulk of cilantro is using reserving some for serving. Add garlic when onion is tender. When aromatic add bay leaves, hocks and beans with soaking water. Top up water to just cover. Bring to a boil then lower heat and cook until beans are tender and meat is ready to fall off the bone. Season with salt, pepper, cayenne. Remove hocks, bone out and chop meat. Return to pot.
Serve over rice, garnish with diced sweet onion, cilantro and a dollop of sourcream.

I also use the 15 bean soup mix 2 ham shanks or 4 hocks bone cut if possible 1 onion medium 1 lb baby carrots cut in half 5 or 6 stalks celery 1 inch pieces 1 or 2 tablespoons chopped garlic 1 jalapeno diced 2 bay leaves Crushed red pepper to taste Tabasco to taste Chicken stock Soak beans with a tablespoon baking soda overnight rinse well. Add everything to a large pot or turkey roasting pan cover with chicken stock by an inch. Bake in the oven at 350 for 4 or 5 hours or till tender. I only had one ham shank so i added part of a boneless ham to this pot. This was a half recipe so one lb beans

I do it pretty simple. One or two bags of beans in the crockpot, on all day, with enough water to cover, along with a chunk of whatever meat sounds good. That's how we do it too. We use smoked shanks or ham bones for the meat and navy or pinto beans. Keith

soak beans over night then drain . can use more than one type of bean. pinto and navy are good together. a few black beans are good in there too. put meat beans chopped onion salt pepper and water in crock pot or on a stove top. low heat. barely a simmer. let them cook all day. add water if needed. after beans are nice and cooked take out a cup or so and run them in a food processor to puree into paste. add that back into the pot to thicken.

Ow. My okie grandma said it took some of the gas out. Its just how she did it and passed it down in her recipe.

My Granny left the wooded stirring spoon in the bean pot. Stirred often while simmering, and all the toots would climb up the spoon and jump out! Obviously many many didn't make the climb!
