I found some 11/2 inch pork chops on sale so I bought some yesterday. Put them on my pit boss at 225 degrees for 3 hours. OMG ! Cut them with a plastic fork !! The taste was unreal.

Well trying to find our supper tonight so I remembered some round steaks from the beef we had killed. Thought I would try them the same way I cooked the chops. But thinking 4 hrs .Only way I have been able to eat them is in crock pot like a roast since they have very little marbling.

Now you're talking! JMO but outside of bacon most pork is cut way to thin these days resulting in dried up leather when you put the heat to it.

I prefer regular thin chops to be breaded to try to give them some kind of protection.

You should try those pork chops soaked in dales marinade for about and hour then cooked the same but no sauce

No remember these are smoked. Meat gets that smoke ring effect and doesn't dry out .
The steaks today that normally would have been tough melted in your mouth .

I've tried the Dales. Too salty for my taste

The second best thing for round steak is making jerky the first is hamburger the pork chops look good though.

I like the flavor of round (minute) steak. I season, dust with flour, sear, then transfer to a glass baking dish, cover and bake with a cup or so of water at 225 for a couple hours. Make gravy with the leavings and serve with mashed taters and corn or peas. Odd to be smoking that cut of meat, but I'd eat it!

Yep, tenderize it with a meat mallet of have the butcher do it. Roll in seasoned flour and fry, make gravy from the drippings. The best way to eat round steak.
