Yeah, but it wonít do you any good. The seasoning mix Iíve been getting for 20-plus years is proprietary. The butcher who sells it to me is a friend and he wonít even tell me whatís in it.

Itís ground venison with 20% fatty pork mixed in and about one apple per pound of venison/pork mix. And the seasoning mix.

The apples get washed, cored and sliced then run through the grinder with a course plate and mixed thoroughly with the meat. We actually run everything through the grinder at once into big, stainless steel pans then thoroughly mix by hand before patting up 1/4 pound patties. Lots and lots of patties (hundreds). I used to stuff about half of it into casing for regular sausage but everybody prefers the patties so we donít use casing anymore. Real pig gut got expensive anyhow thanks to new PA Dept. of Ag. regs. a few years ago.

Is it basically a breakfast sausage type seasoning?

Looks good. I had some brisket. Stalled on me at 12 last night at 172 degrees so I left it on the smoker. Checked it at 5am and it was at 161. sick gave up and let it rest until 2pm in a cooler. Had some tonight and it was fantastic. Iíll never understand the stall.

I know it has coriander and black pepper in it, but beyond that, I havenít a clue. And I donít really know what breakfast sausage seasoning is. This is the only type of sausage I make.
