Well done people, keep those pies coming. I don't have a secret recipe and it's very easy and I promise it is good. Try this easy one.

We ended up having key lime tarts instead of pies. Still good though! But not nearly as good as all these apple pies!

I like a mix of Granny Smith, Cortland, and Honey Crisp Apples. Along with Gourmet Cinnamon and Gourmet Nutmeg. None of that CHEAP store brand stuff !!

I use this stuff from King Arthur ….when a recipe calls for cinnamon…..great stuff !

The Vietnamese Cinnamon really makes the flavor come out in an Apple Pie !!

The best pie baker in our area (we're talking about the 40's and the 50's when all the church gals took pride in their baking skills) was Geraldine Drew. When I started planting apple trees in the early 80's I was told to ask Gerry which apple varieties to grow for pies. She recommended Spitzenburgs and Northern Spy as her two favorites.

But if you want a truly wonderful apple pie add a quince to the mix.
