Anybody make jerky this way? What kind of meat do you use.Snow goose for me today.

It's the only way to make jerky. The ground stuff is anything but.

Yes I smoke 20 to 30 lbs of jerky a year always whole muscle and I really like that jerky seasoning. I do add extra garlic and will dust with crushed red pepper on a couple of trays before I smoke it. There is a little meat shop near me that does Basque Chriszo and that's the best use I've ever found for wild duck or goose meat.

That's the only use of snow geese that makes them half ways edible.

Cabelas manual jerky slicer. I usually slice up 3-4 pounds and use half for jerky and half I marinate in olive oil and lawrys marinade to be pan fried- both ways are yummy.Yeah even snow goose- yummy.

I make jerky, mostly venison, but I've used several other meats as well. Nothing wrong with ground meat if its done right its hard to tell from whole muscle but I really like both. The ground is from the scraps and parts that are too little to slice or odd meats like cottontail rabbit or snapping turtle jerky. I too use Hi Mountain jerky seasoning mostly, my favorite is the black pepper garlic, the original is good too. I'll sprinkle other ingredients in there too on occasion. Cayenne pepper is great for a bit of a kick. I use the dehydrator for the majority of what I make. I like it pretty dry too, nice and tough and chewy. I prefer it to wetter tender jerky.

Here's some ground jerky from scrap venison I made years back. No one turned their nose up to it. lol

I havent made jerky since i made biltong. I made 2 deer into biltong last year and it was all gone in a month. It was an even split between those that liked it and those that didnt.
