Too get the moisture down a point or so, before I bag them up. Wife said she wants some to candy in the next couple weeks. She runs 4 pounds at a time through a roaster with vanilla, cinnamon, and sugar. Strictly low calorie don’t ya know. Some times she adds some rum to the mixture for medicinal purposes. wink[Linked Image]

Pecan pies are the greatest. We used to shake a few trees here with a rope and an Allis Chalmers 185 when I was kid. About .75 cents a pound unshelled and Ole boy better not see no wormholes lol. Hurricane Fran got some, there's only 4 pecan trees left here now. I don't pick them up anymore as my son is allergic to them, peanuts and walnuts

Interesting drying rack, do you force air through them or is it just natural? I do like homemade pralines.

If those are Hark, can you save me a pound? Hoping to graft some trees next Spring and want to know what I'm getting.

HayDay , don’t have any Hark produseing yet. Have grafted around 100 small trees over to Hark. These shelled pecans are Pawnee.
Run, I have 25 acres of planted, irrigated trees. Around 300 trees all together.
Iowa Bob , I just turn big floor fans on them to dry them down. The drying rack is home made using angle iron for frame and hole punch stainless steel for the 4 slide in racks. Can easily put 150 pounds of shelled pecans in each rack. Several dollars worth at 6 $ a pound.

Thanks Savell. Pretty small operation compared to some in Texas, Georgia, New Mexico. Most of my finished product equipment is hillbilly engineering but works for my operation.
Nessy, I grow the best pecans in 7 counties. grin all joking aside, look at the color of mine compared to the real dark ones you get at Wally World. That generally is an indication there 2-3 years old and probably from Mexico. Them dark ones taste like cardboard to me. Guess it’s like youens maple syrup, the lighter syrup has better flavor?
