my preferred steel is also the diamond oval Dexter makes
a good diamond steel is worth the 35-40 dollars they will run you
as for other knife brands , nothing wrong with an F.Dick either but more money
there is also a member her that deals in reconditioned knives from meat packing plants he can get you set up for a good price.
America only has one issue, we have a Responsibility crisis and everything else stems from it.

GCP good point on fit in hand. It has to fit feel comfortable not excessively heavy or light. A good knife is a good thing. If I remember correctly I bought my steel for $70ish.

You all might laugh my dad's last elk we used my 12" chef knife and 7" santoku knife and a 4" pairing knife. Had that elk butchered in 1.5 hours. My buck this year was processed with 2 7" santoku and 2 4" pairing knives and a filet knife
Recently I bought an acreo pairing knife from a local restaurant supply store. I put it to the test and was so impressed I bought a carving knife another pairing knife another santoku knife and serving fork. They are high carbon German steel hold an edge well

Another vote for Victorinox. I process the whole deer, from skinning to boning to cleaning up the various cuts with a good bone saw and this 6" curved semi-stiff boning knife with a white Fibrox handle. I like the white handles because I can tell when they're cleaned well afterwards. I've got three of them.

If you can find them , CASE XX CHROMIUM old butcher knives. Well balanced , and holds an edge once sharp . Just touch it up after every use . They're hard to find , but it looks like this , but has a 9" blade Two brass rivets and Bakelite handle . Carbon steel , and stay away from stainless , or Blade Serrated . They loose the chrome finish over time , and look ugly , but the best knife I've ever used . Gave one to my daughter , and she loves it compared to all her other knives. Bought her a wet stone and showed her how to sharpen it and touch it up . https://www.ebay.com/itm/284530730422?

I sold one of those case knives to someone on here years ago. Was it you OW? Yep , saw it on one of your posts , and asked if you would sell it . Funny not long after I bought it from you , found three more on E-Bay , and have them for gifts to family . I still have yours , and gave my daughter one with all the chrome on it yet , she loves it , it has a very good balance in your hand .

When my parents passed , there were two case xx knives they used for years , I still have them , and they keep an edge for awhile . There's no chrome left and wasn't chrome on them even when I was a kid . I broke the tip off one , and started looking for others to replace it . They will cut you quick , if you're not careful . Like razors . Have had many people ask me about them once they see how the slice a roast or hog .
