So my family does a significant amount of meat processing. We have been using our steak knives in the kitchen but they are not effective as we with them to be.

Please give me some good brands for meat processing knife sets.

I like the old hickory 7-7 a very economical butcher knife high carbon steel

Dexter or victronox boning knife

Victronox makes a 5 inch curved semi stiff this is the size and shap I like , somthing about 5 inch just feels better to me than the 6 inch for deer

I have 3 of the Mundial marketed under the LEM name a 6 and two 5 inch all semi stiff curved boning they work well enough https://www.lemproducts.com/product/mundial-5-curved-narrow-semi-flex-knife/cutting-tools I was getting them for 9.99 at farm and fleet

the victronox is double the money but probably a better steel

I have some Dexters I like also

the thing you will notice between knives besides how the grip feels in the hand is how long it will hold an edge

Id start looking at victornox or J A Henckles and go from there. My preferred steel is carbon diamond oval. I've had this Mundial for nearly 20 years and use it at least once weekly. I bought it when I was a butcher.

my preferred steel is also the diamond oval Dexter makes

a good diamond steel is worth the 35-40 dollars they will run you

as for other knife brands , nothing wrong with an F.Dick either but more money

there is also a member her that deals in reconditioned knives from meat packing plants he can get you set up for a good price.

GCP good point on fit in hand. It has to fit feel comfortable not excessively heavy or light. A good knife is a good thing.
If I remember correctly I bought my steel for $70ish.

You all might laugh my dad's last elk we used my 12" chef knife and 7" santoku knife and a 4" pairing knife. Had that elk butchered in 1.5 hours.
My buck this year was processed with 2 7" santoku and 2 4" pairing knives and a filet knife


Recently I bought an acreo pairing knife from a local restaurant supply store. I put it to the test and was so impressed I bought a carving knife another pairing knife another santoku knife and serving fork. They are high carbon German steel hold an edge well

I prefer a Victronix and a bubba blade filet knife in combo, I also have a worksharp Ken Onion and a couple of good steels. I use the steels most of the time.

Another vote for Victorinox.

I process the whole deer, from skinning to boning to cleaning up the various cuts with a good bone saw and this 6" curved semi-stiff boning knife with a white Fibrox handle. I like the white handles because I can tell when they're cleaned well afterwards. I've got three of them.

Cant go wrong with Victornox. But I just butchered a deer Tuesday and used a Cuda fillet knife 5 inch blade for the boning out. Did a great job sharpens and holds a edge well. The Cuda scissors are good also, I use them on the boat a lot. Oval diamond steel made by Jewelstik.

I use the Rapala filleting knives. They really hold a edge and sell for 20.00 at Walmart. I used them out west this yr, we had 7 Mule deer Does. I used one of the knives on all 7 Does and still had a sharp edge when done.

If you can find them , CASE XX CHROMIUM old butcher knives.
Well balanced , and holds an edge once sharp .
Just touch it up after every use .

They're hard to find , but it looks like this , but has a 9" blade
Two brass rivets and Bakelite handle .
Carbon steel , and stay away from stainless , or Blade Serrated .
They loose the chrome finish over time , and look ugly , but the best knife I've ever used .
Gave one to my daughter , and she loves it compared to all her other knives.
Bought her a wet stone and showed her how to sharpen it and touch it up .

Yep , saw it on one of your posts , and asked if you would sell it .
Funny not long after I bought it from you , found three more on E-Bay , and have them for gifts to family .
I still have yours , and gave my daughter one with all the chrome on it yet , she loves it , it has a very good balance in your hand .

When my parents passed , there were two case xx knives they used for years , I still have them , and they keep an edge for awhile .
There's no chrome left and wasn't chrome on them even when I was a kid .
I broke the tip off one , and started looking for others to replace it .
They will cut you quick , if you're not careful .
Like razors .
Have had many people ask me about them once they see how the slice a roast or hog .
