On purpose?

They need fat however pork or beef kinda defeats the whole point of a Turkey burger. Im sure YouTube has some good videos. If i was asked id probably add lots of seasoning and maybe an egg or 2 to help hold together. For some extra fat maybe mayonnaise. Bake in the oven then fry them to add color and crust to it.

Quick google check says just grind the meat,then add egg or breadcrumbs for a binder when you're making patties to cook.

Farm raised or wild? Might add farmed Turkey or Chicken skin/fat, but again it's the fat your trying to avoid.

That s the only way we've found to eat the legs on the wild 1s...
Strip the meat off and save it til you get enough to make.it worth getting the grinder messy.

I used to work with a guy that would bring turkey burgers into work to share with the guys in our department. He used to mix an egg and some onions, Worcestershire sauce and cracker crumbs or panko in with the turkey, then he put the patties in his George Foreman grill. They held together better that way rather than trying to flip them over on a regular grill. I have to admit, they weren't half bad.

Betting 90% of the bad repliers on here never tried one. I worked at a restaurant that sold them and held out for over 2 years despite them being our second most popular menu item before I tried them. Now, I love me a beef burger. But the honest truth is I like turkey burgers as much as, or maybe even better, than beef burgers. SO if you've not tried them.... just shut up until you do at least, lol.

It has quite a bit of fat, but my wife regularly buys 1 lb tubes of ground turkey from Aldi. Way cheaper than beef. We mostly use it to make things similar to hamburger helper but sometimes make patties. Pretty good with a little bbq sauce.

As far as the fat ratio goes... the ground turkey I buy contains 3-5% fat. So if I was to make it, and I WILL be in the coming weeks... I'd use that ratio. If I was starting with straight turkey meat, all fat removed.... I would add 5% pork fat... all meat removed. That will give you 95/5 ground turkey.

For years have been filleting the breasts and legs off them old wild gobblers and just grinding into 1-2# packs and freezing. When u want a good lean meatloaf just use a pack of wild turkey and a pack of venison. Can't stand meatloaf made from beef anymore-too fatty.
