Any of you mutts do any Christmas cooking? Since my marriages have always been to those that have no Christmas cooking traditions, it has fallen on me. Last night I got the apple pies off the list. I have a very nice late and tart old homestead apple called a "Brock" (mebbe Brach)? that makes great pies... OK lets see what y'all are cooking up for Christmas.
My fear of moving stairs is escalating!

Here's my apple pie recipe: 5-6 apples sliced up thin, half cup sugar, 1/4 cup all purpose flour, 1 1/4 tea. cinnamon, 1/2 tea. nutmeg, 1/4 tea. allspice. Pie crust is 2 cups all purpose flour, 1 tea. salt, 2/3 cup crisco and enough cold milk needed to form a ball. Cool pie dough for at least an hour before rolling it out. Bake at 425 for 30 minutes then reduce heat to 375 for another 25-30 until bubbling out of slits Dot apples with a tablespoon of butter before putting top crust on.

One thing my family has always done was make French cookies for Christmas. This past week I made 30 dozen to give to friends and family. Next up was chocolate covered peanut butter balls and mint cookies. Today I boiled shrimp, baked 2 pecan pies and made a big batch of hot chex mix. Tomorrow I'll cook up some green beans with bacon & onion for our little family dinner with my son and daughter in law Christmas day. Christmas day I'll make a sweet potato casserole and bake a small ham and heat up some rolls. My wife has had health problems this year and I've been a one man band doing all the cooking this year. I'm just grateful that I'm able to do it, I am blessed. Sounds great!!
