Hutchy OP trapper H Joined: Feb 2014 Posts: 7,978 On Georgian Bay, Ontario Canad...	I know there are many methods out there, but this is one shown to me by a trapper friend over 20 years ago. It wastes very little meat. I guess it just kind of stuck with me.

Your comment makes me think I should save up the strips and pickle them! The bones basically dissolve, so why not?

I carve the Y bones out while still on the filet but that method does take more meat out with the bones. I have never seen them removed quite like you do. Good method! Lay the fish on it's back . come in from the tail end , under the two belly fins , remove them both at once. in one piece. Using a sawing motion. Now fillet the fish normally.
