The manly Liver and Onion dinner. I had just a small helping of liver last week. It had been a long time since I made a good full course meal. Today was the day. My neighbor stopped by yesterday and said he used to eat liver a couple times a year when he was a young fella some 60 years ago.So I cooked up a few pounds for both of us. My wife doesn't like it nor does my neighbors wife so we ate good today. Prepping the liver by soaking in whole milk and cream for several hours in the fridge. Seasoned quartered potatoes ready for baking in the oven. Baked seasoned potatoes ready to eat. Carmeled / brown sugar carrots ready for the oven. Carrots hot and ready for serving Slow cooking 4 sliced onions to saute the liver. Large platters of tender fried / breaded baby beef liver slices. A large plateful of all the fixings. I had to stack some things on top of each other to make it all fit. I also did a pot of peas and diced onions and mashed potatoes but didn't get a photo of them. Delicious also. Thankfully I have enough for another meal in a day or so. I am maxed out on my Iron requirements I believe.

I found some calf liver the other day. I really like it. Usually have to settle for beef liver. Just not much veal sold any more and makes calf liver hard to find. I just put flour salt and pepper in a baggie. Put a piece of liver in and shake it up. I cook the liver on top a bed of half cooked fried onions. Then it all gets done at the same time. Over cooked liver is tough and not good.

I love beef liver, but deer liver ruined me on any liver for quite a few years. I'm back now.

Looks good, but I like deer liver better. Me to.I'm kind of scratching my head on the ones saying otherwise that have tryed deer liver.

Once a month when I was a kid we'd go to Sunday dinner at a greasy spoon. I loved their liver and onions with mashed potatoes and peas. I need to make some once I get back to the land of milk and honey in a couple of weeks.
