What are they coated with? Where's the bones? How hot and how long each side?

Since you’re in oil pipe country I thought you’d have a small pipe grill for the small food and save your big cooker for the big foods. grin

..... close enough I guess... what you want to do is light up some coal and mesquite chunks... let that burn down good... then get your ironskillet over top of it... once that skillet gets hot drop a stick of unsalted butter in it ... once the butter melts down.. sear those seasoned up thick chops on both sides ... spoon melted butter over top on the second side

.. then ease that skillet over to the right ... drop those chops over the hot coals flippin a few times ... it’ll flame up good charring the fat and really set the juices in ... pull at about 135 in the center

It’ll change y’all’s religion lol
