Usually moose, Altai elk, or roe deer (often Siberian roe deer, which is a distinct bigger species), and sometimes reindeer. Altai elk venison has become more common as it is the only species, apart from reindeer, that is bred on farms (venison is actually a by-product, they focus on velvet antler production). Other types of venison - moose, roe deer, and wild reindeer - often involve elaborate poaching/illegal trade schemes, especially with venison that comes from Siberia.

I told my relative to ask the waitress what animal the venison was from.
She said, “I don't have language for various deer types in Russian and she doesn't have it in English. it's not gonna happen.”
I don’t think it’s beaver though KOSOI, but I guess we’ll never know for sure.

Venison tartar from another restaurant, this one in Moscow. There appears to be a purple form of wood sorrel or another species of Oxalis in this dish. Does anyone know if that's what it is? Keith

I had to look up both cowberry sauce and apple tartar. Apple tartar is actually a tartar sauce made from apples. Weird. And cowberry sauce is what we Americans would call cranberry sauce
