Wolfie…Every September up here in NH ,they have a Greek Festival,called Glendi. We go every year and I get my fix of Braised Lamb Shank and other Greek food…Oh my is it good. And we raise lamb…so go figure…lol

Iam sure they have Greek Festivals in Mississippi….Just do a google search….those old Greek grandmas can cook ! If not Mississippi then as close as Birmingham. There's a good size Greek community in Birmingham and most of them are restaurateurs as all of the better eating joints are Greek owned. I got an uncle in law that's part of that group. They have an annual Greek festival put on the the Greek Orthodox church. Not to be confused with the Russian Orthodox one in Brookside. BTW the Italians went into green grocers.

lamb is good stuff you might want to get a few Katahdins they make good lawn mowers. they don't fight fences , they want to stay in a group https://www.katahdins.org/they are small enough that one person can easily butcher them alone
America only has one issue, we have a Responsibility crisis and everything else stems from it.

Lamb is great on the BBQ. Used to get them direct fresh from the abbatoir when working south of here back in the day.
Forget that fear of gravity-get a little savagery in your life.

I like lamb best grilled medium rare, with garlic salt rubbed into it, with grilled pita bread, onions, tomatoes and mushrooms on the side. We used to mostly grill lamb steaks cut across the thigh bone. They were very good.
Small pieces of lamb liver, wrapped in bacon and grilled are very good too.
Goat is very good grilled too. It's a lot more milder flavored than lamb.
When butchering lamb, you have to be careful to keep the lanolin from the hair off the meat, otherwise lambs are very easy to butcher.

I didn't care for either one. Maybe I just didn't know how to do them up right. I just processed like a deer. The mutton was actually better than the lamb but both were baaaaad. Lamb was intact ram and maybe around 8 months old.
I'm going to stick to raising pigs. I haven't had a bad pig yet.
Poor people have poor ways.

Always buy American Lamb….the Australian Lamb has a strong taste to it. For lamb ka-bobs, I cube the meat from a leg of lamp and just marinate it in a simple Italian Salad Dressing ovah night
