Need a new smoker. Im done with the pellet types. To many problems. I like the simplicity idea behind the charcoal smokers, but the propane versions sound pretty reliable too. Any preferences for either type ?

The simple chief electric smokers look reliable but I dont think they actually cook the meat ??

How can you have problems with a pellet smoker ?

Just set it and forget it .....lol

I have a char broil electric that is super easy and good results. Can put a probe in the meat set the cook to temp and go hunting. It will go to 120 degree's when it hits your set temp.

Never seen a restaurant advertising bbq, anywhere not just kc style, that uses pellets. You wont see them in a competition either. might see somebody who prefers mesquite, or hickory or apple but never pellets

To me Pellet smokers/grills are too much like an easy bake oven from the 80s. I personally use propane for grilling and cooking whole hogs. I have added a 3” angle iron about 4” over my burner so I can put wood chunks on and still get the smoke without having to babysit a cooker all day.

Weber USA propane grill with smoker tray. Works great. Not set it and forget it though..

You can do a pretty good job with charcoal and wood chunks, The Weber Smoky mountains have won a bunch of competitions, All wood is the holy grail, but you have to tend it more closely. You can screw up with any of them though, lol

I can't recommend on smokers, but for bbq grills, charcoal is the only way to go for taste.

I'm not sure how many carcinogens you ingest from cooking with charcoal - but my guess is the Tri-Tip, Rib Eye or Brisket will kill me first

Built my own smoker and pipe smoke/heat in with an old small wood stove. I use wood only. Apple, cherry, pear and preferably plum when I can get it.

Be a real man and cook real meat on real wood.
At least use lump charcoal made from real wood with nothing added.

Cheap charcoal actually contains coal dust / chips.
