Will be eating some fresh geese soon cooked sagabon by the fire.The women do the cooking/fire tending here.
Some dry smoked nemestick will be good too.

I have a Weber Smokey Mountain and it works fine. I also have a homemade charcoal grill that rocks for spatchcocked chickens, burgers and brats. However, I see a 'Smokin It' electric smoker in my future. Im still a busy fella and dont always have time to babysit temperatures. To each his own, the important thing is that youre not a vegan Lol

I have a Masterbuilt electric smoker and a stick burner. Honestly I use the electric way more because I'm lazy. I don't want to baby a fire for 10 hours for a pork butt or 20 hours for a brisket. Not sure what you meant by electric smokers not cooking the meat?? Mine does... just like an oven. A smoky oven, lol. That said I wouldn't be without my stick burner smoker/grill. Things like steaks, wings, and often even ribs turn out better (I think) over real wood.

The electric smoker I was referring to was the little chief smokers. I read that they will only reach about 165 degrees. What is a stick burner ?

It dont get better than a nice ribeye cooked on real wood allowed to burn down to charcoal. grill right close to the coals. Meat cooked so its dark brown on the outside with black stripes from the hot grill but still pink on the inside.

I use this one and I can run it 250 to 300 easy, but I normally like to run it around 170 to 180 low and slow, I use chunk wood the nice part is with the element it can maintain a level of heat if I run out of wood in the middle of the night on a long cook.

Looks similar to the Weber. Does it have an electric element ? The add doesnt say.

My bad I had the wrong model this is the one I have it does have an electric element, but you can remove it and plug the hole to burn charcoal or wood.

I competition cook bar b que and promote a competition here in San Saba for several years. A lot of the better teams use pellet smokers , and win... a lot.

I use my gas turkey cooker under my charcoal smoker.
I put the wood in the pan above the flame.
Way easier to monitor the temperature and keep it low.
Works great for me.

I have an electric smoker. It has a pan that you put wood in which I soak overnight in water. I like that I can set the thermostat and forget about it.
We mostly use it to smoke fish, but have done some homemade sausage too.
I had a charcoal smoker prior and didn't like it as well.


I don't care how nice the hand soap smells, you should never walk out of the restroom sniffing your fingers.

Om my 22 WSM, I use whatever charcoal I get on sale, briquet or lump, For the wood chunks it's usually fist size chunks of cherry or oak, or picked up sticks from a hickory in my yard, I mix and match, and frankly ,I can't tell the difference from one wood or another and neither can most folks.

I don't try to keep the temp low, just let it find the range the smoker likes, usually around 275. The WSM 18" is said to be more efficient then the 22, but theres less grill space. Depends how much your cooking at once.

I had a stick burner , a typical offset barrel type, only burns wood, It was time consuming to tend, but YMMV.

They all make a good product when you figure out what your doing. Just remember, dirty smoke bad, thin blue smoke good... grin

I have a PK grill that will last will last multiple generations. Have a old Oklahoma Joe's for the big jobs. Wood or lump charcoal.

I have the follwing.
Pellet grill
Charcoal grill
Propane grill
Flattop grill
Campfire wood grill (grate over a camp fire with oak)

I think that covers it. Sarge

Yeah, got one for whatever mood i'm in. Sometimes got a couple going at one time. All of them is too much unless i have extra hands.
My brother has a wood grill for his boston butts he does at 20 to 30 at a time. I swear its as big a a water buffalo.
