I love making maple syrup. Consuming it...not so much.

So, what do i do with a couple gallons of that crap? I'm thinking of mixing or infusing a bunch of it with;
  • Honey
  • Vanilla
  • Cinnamon
  • Various berries


Any thoughts, ideas, experience, warnings?

Neighbor did cinnamon in a few jugs. Have not tried the syrup yet. The bigger producers do the bourbon barrel infusion. and they say it is a big seller. I prefer mine straight up.

OK, it's my nature; I had to experiment.

I simmered about a half pint with a couple cinnamon sticks, and a couple blackberries. As it was cooling I added several TBLS of honey.

The wife liked it, and I figure it will be nice to sweeten my morning coffee. Not exactly a world changing discovery.

I look at it like if you like maple syrup them why mess with it?
But I did mess around a little. I infuse it with red pepper and I do like it alot. I only sell pure maple syrup though.

I made some hot honey one time, honey infused with hot chiles. It was very good.
I just simmered the chiles in the honey for a bit.

I guess I've lived a sheltered life.

My mommie only used maple syrup on pancakes or waffles. Other than a few batches of beer/wine, that is the only way I've ever used it.

A quick internet search generates dozens of uses. i think pick a few and give them a try.

You Could make up batch of maple whiskey? I had never heard of it but came across it when I was trying to use up some old stock. Ithink it’spopular in Canada? if I remember right it’s 1/2 Canadian rye whiskey and 1/2 maple syrup heated and rebottled. Its little rich for my liking to drink but makes an absolutely amazing basting glaze when put on meats in the smoker.

Maple sugar is another good use for extra syrup. It’s in between white and brown sugar in color and has a great maple flavor to it . You can use it as a substitute in recipes anywhere else you would otherwise use sugar. It’s supposed to be healthier than regular sugar as far as raising blood sugar

That one is right up my alley. I will try that, for sure.

See if you can find some used bourbon barrels and age the syrup in those... So good.

I use maple syrup in one of my breakfast sausage recipes. It's awesome for sausage/egg/cheese biscuits or patties on the side with eggs and hash browns. Not so great to make sausage gravy.

Not technically infusing, but something I tried this year with my syrup. boiled 3/4 cup maple syrup to 240 degrees and then stirred in a pound of salted peanuts....stir until coated and roll out on a baking tin. Let cool and break apart...my friends and family cant get enough of them. Gonna try it with english walnuts soon. Just a thought if you like that sort of thing.

I cook with it instead of using refined sugar. Things like waffles, meatloafs, jams, chocolate chip cookies. With the maple flavor one can use about 2/3rds the amount of refined sugar and still get a sweet taste. There are several things I did not list and dozens more if one chooses to do so.

Shine and maple syrup sounds pretty danged good to me.

Especially if'n it is a tasteless reflux version of very high proof. Why cut it with water when you can flavor it at the same time. That is a great idea. Or, at least might be if i lived in New Zealand.
