I like a blade steak or blade roast for flavour.They are a bit on the tough side though,but I'm a northerner so still have plenty of teeth.
Forget that fear of gravity-get a little savagery in your life.

I go to Sam's Club and buy a 12-15# beef round. Cut it into roasts, grind into burger or whatever else. 3.59/# I think.

I don’t have any favorites that are cheap. Going to put a Tri Tip on the smoker later. I don’t consider it expensive or cheap. After a low and slow smoke I’ll sear it on the gas grill.

Get you some beef shanks and dig out your dutch oven. Put some oil in and hang the oven over a fire with a tripod. High enough it dont get real hot. Brown the beef on each side in the oil. Lay them aside. Put in some chopped up onions celery and carrots. Cook em a few minutes in the oil till they tender up some. Put in some tomato paste and cheap dry red wine. Add some tomatoes , garlic, rosemary, and salt. Let it come to a simmer. Put the shanks back in and push them down into the bottom of the oven. Put the lid on and let it simmer 3-4 hours.

A well cut chuck eye steak is as good as ribeye Maybe off a supermarket or mid range steak house restaurant beef but not off a high choice or prime carcass.

Our spring calves are ready at around 14 months and are fall calves 16 months.
