Not possible when running a business. If I demanded cash only for goods and services customers would soon be in short supply.
Small deals through Craigslist or Marketplace are always cash but very few would fork over $10,000.00-$15,000.00 in cash for the 30% advance payment I require on all building and remodeling jobs.

On building and remodling jobs you have recourse in the form of a lien. sell somebody half a beef and they dont pay your just lost half a beef

even after you get a judgement if they dont pay nothing is done. you can garnish wages if there are any. if someone didnt garnish them first

Contact your States attorney and see what his thoughts are about this because different States view checks differently so it’s a crap shoot. Explain it clearly to him if he put in the cut order how could it be your fault?
If he’s not paying you I’d think that that beef is yours to pick up, you would think taking ownership without paying would be theft in my book but SAs are often lazy. Sounds like this guy lives by the I take and find a reason to not pay for everything I can get away with. See what your local Sheriff says he’s the top LEO in your County he might step up.
I’d pick it up pay for the processing if needed and sell the “bad” cut beef to others willing to pay a fair price for it in cash!

Then when I was online checking my account a few days later I noticed a charge back on my account. By the amount of it I knew which check it was so I called him. He said he didn't know why there would be a problem with the check but he would talk to his bank and find out what the problem was. Then yesterday I got the letter from the bank about it that showed that he had put a stop payment on it. So I called him again angry that he lied about it. Had to get off the phone with him before I said something too stupid. He is claiming he will bring cash tomorrow for me but supposedly I only get it if he is happy with how the processor finished his order. The processor did get paid and he cashed his check a couple days before I did mine. He says his appears to be ok. the customer already has the meat. This is all over the preparation of the head and hide for consumption. He was not clear on what he wanted and it's not a service that the processor usually provides. He was just trying to make a difficult customer happy.

People make a living complaining about everything and anything to get it cheaper or for free you will find a lot of guys that never deal with the same guy twice because they turn everything into a game. If he gets all the meat for free and does not pay a dime go to civil court and ask for judgements until your paid this guy is depending on you folding so don’t. States Attorney, Sheriff then Vito but get paid!
