Andrew Eastwood posts on here time to time. If you can get it out of him best turtle I ever ate was at his place. It was cooked in a smoker. Falling off the bone tender and absolutely delicious.

I pressure cook mine for about 20 minutes. Let it cool to the touch and roll in flour, S&P or any thing you want then fry it like chicken.

The Cooking On The Wild Side forum has a few turtle recipes. There are quite a few pages to the forum so you may have to some searching to find what you are after.

Used the recipe from the meateater cook book and my grandpa said it reminded him of when his dad used to make it when he was younger when he’d go out hunting and come back to a bowl of warm soup

This was the snapper used to make it

We ate a lot of turtles growing up. My mom would soak in salt water and par boil for 15/20 minutes. Then coat with flour/cornmeal and brown the meat 2-3 minutes/side. Put in a baking disk and cook covered in the oven. Last 15 minutes take off cover. Always delicious. She never made soup with turtle.

Yep, making soup is wasting good meat. Make soup from chicken!
