they didn't notice and when I asked my wife how she liked it she said it was good better than kale she had in the past.
she had bough a bunch of kale at a farm stand so I made that with dinner as it needed to get used
what I didn't tell anyone that I did 50/50 kale and Lambs quarter . she said it was good
so more weeds on the table in the future.
I have an area near the back of the garden I tilled but haven't planted much so I let the lambs quarter grow in one row
my neighbor works for pizza hut and brought home 2 of these huge aluminum colanders , corporate sent new ones and these were headed for the trash they have a dent or two and gave one to me and the other neighbor with a garden they would probably hold 5 pound pasta cooked easily. it sits on a tomato cage just right that it is like a basin stand and all the water I am using to rinse greens waters the tomato
the rest of dinner was egg tacos peppers, onion and bacon saute' then added beaten eggs to make it a scramble put that on tortillas with cheese , sour cream and salsa , greens and bacon on the side. I just had mine with out the tortilla

Sounds interesting . Thank you for adding details. pull up the small Lambs Quarter with the root the plants I was pulling were 4-7 inches so still quite young the leaves maybe an inch by and inch and a half then wash well to get the dirt off , snap the stems and roots off , rip up into a little smaller pieces I toss the bacon in give it a minute then toss in the greens and keep them moving and add a little water to deglaze the bacon from the pan as it starts to dry out I did about 4 strips bacon for the 10 inch cast iron skillet that was about half kale and half lambs quarter the lambs quarter cooks down more than the kale

In Nebraska lambsquarters and pigweed are two distinctively different plants. I've ate lambsquarters but never pigweed.

I don't treat for weeds either , mow ever other week typically , let it grow longer and use it for garden mulch often
I noticed watering tomatoes that had been mulched a couple weeks since my last mowing and ones that had not been that the ones mulched will take a lot more water when watering before any runs out , the mulch keeps the soil loose underneath , I suspect the worms and such help with that as well as shading the soil to both keep weeds down and keep moisture retention up

I do like my spring dandelions, they get bitter as spring gets close to summer. Simmered in two water changes, drained and tossed in a cast skillet with bacon. Now I need to try Purslane and Plaintain, never have. I am weeding out a lot of wild lettuce also. Have to try that.
you're only allowed so many sunrises... I aim to see every one of them!
