Fair warning. We call it San Francisco East.

On the outskirts , you could check out the Biltmore estate. Largest private home in the USA at one point. Not sure about the evening hours , check out their website. A tad spendy , but interesting.

Don't miss out on this, it's absolutely astounding. Some parts of The Last of the Mohicans were filmed there. You'll recognize the bridge from the movie.

Spent a couple nights there and was some really good eating. About all I can remember sorry.

Biltmore is awesome. You really need to go for a good half day to see the house and gardens. There is also an awesome PINBALL museum. I highly recommend spending the $15.00 for a day of play. They have 35-40 machines and about 30 plus old arcade games.

Asheville isn't all bad. If you are into beer there are lots of good breweries to visit. Biltmore is a great recommendation, definitely need to do that. Also drive on the Blue Ridge on a clear day and enjoy the views.
Go eat at Five Points restaurant for breakfast. Best breakfast you will ever eat. Greek owned place. My roommate in college's uncle runs the place. Super good people
There are definitely some blue hair ultra libs in that area though, so avoid that.
Gotta live up to the nickname...

Pretty good suggestions so far.
If you are in to craft beer, park the rental at the hotel and uber around to the craft breweries. Some have pretty good eateries also.
Bowhunter referred to Asheville as San Francisco east, I call it Chapel Hill west. College town with a lot of retirees and the silliness that goes along with such.

Stay out of Downtown proper Asheville. Biltmore is nice, but expensive. If you go to Biltmore be careful, a tree fell and killed a man there a few weeks back. Sierra Nevada brewing is over near the airport. There is another pinball museum in Hendersonville, about 20 minutes from Asheville. STAY OFF I-26 as much as possible. Construction and backups all the time. Go float the French Broad in a tube at Zen Tubing, been hot here lately. Blueridge Parkway towards Cherokee is good with the Pisgah Inn for a good place to eat and views. PM if you have any questions.

I drive through there on I-26 once a month on my work commute lol

I-26 actually goes down to one lane at the Smokey park bridge. No because of construction either. For 20 years they have planned to tear a couple of businesses down, build a new bridge, kill a couple of toad frogs, and make traffic better. A 20 year enviromental impact study stops logic again.
