Slice it just like bacon, batter it in flour just like you would do backstrap and fry it. Best eating there is!

We used to call it "super bacon"

It's hard to beat a plate of jowls, turnip greens, and greasy fried taters.

In the South when we bbq a hog, we cook the entire hog, along with the head which is split. Once we turn the pig over on its back, people begin pulling ribs and loin meat to enjoy. Those in the know, pick their meat from the jowls. It is the sweetest meat on the entire animal when properly cooked over wooden coals.
