Another question when fleshing a summer skunk if you see the strips on the side your fleshing are you taking to much off??

No, there is very little to flesh on a summer skunk. Unless you are doing it for practice, they have no value.

They seem to flesh better for me when they just get thawed out from the freezer but still cold.

Definitely skin raccoon cold. No harder to flesh cold and a lot less mess with solid fat instead of runny grease.

Skin em when you catch em, and throw them in the fridge overnight, then flesh.
