We canned all manner of goods for decades. We have several canners and mostly used the old Presto/National. It holds 7 qts and something like 14-16 pints. I bit the bullet and bought a big 941 All American a couple years ago. Glad I did. Not only do I not have to keep extra gaskets on hand, but it holds double what the old P/N holds. That equates to only having to can for half the time.......assuming you, like me, believe the gauge watching is the most boring canning chore there is!

AA 941 should have both gauges , a weight and a dial gauge.
If not you may of bought an older used one .
Even then you can add a weight gauge to it.
Once you get the pressure you need , you should be able to ajust the flame , and just listen to the weight jiggle or hiss.
If it changes any , then check your dial gauge.
I go here for parts and manuals , they carry parts and manuals for almost every canner/cooker made.
