I have never made any but this is what a search brought up. DIRECTIONS Wash, sort and stem berries. Place in deep saucepan or jelly kettle and bring to a boil, stirring often. Simmer for 10 minutes, then mash with a potato masher. Simmer an additional 5 minutes. Run through a food mill or jelly bag. You may have to mash juice out of the jelly bag with your hands to fully discharge -- there should be about 2 cups of milky juice. Measure fruit juice and add boiling water through pulp to make a full two cups. Pour into deep pot, on medium-high. Add sugar and stir well. Add butter (reducing foaming) and bring to a boil. If adding pectin, do so once it has begun to boil. Boil hard for 1 minute while stirring constantly. Ladle into hot canning jars, apply lids and rings, and process in a boiling water bath for 10 minutes. Jelly will turn darker, ranging from peach to orangey-red as it processes. It will not be clear, but resemble honey.
1 quart ripe buffalo berries 1⁄2 cup water 2 cups sugar 1⁄4 teaspoon butter
If you pick your berries prior to a frost, you will not need to add pectin. If the fruit is overripe or has been through a hard frost, add 3 oz liquid pectin before boiling."

We have a gallon of wild plum juice in the frig waiting to be made into jelly. I have enough Nanking I don't need it, but the plums were thick.

Goose here's the link of the recipe I used. https://practicalselfreliance.com/rhubarb-jelly/ it turned out really good for the first time making it. I made 70 jars of Rhubarb, we started selling it at the farms market. Either it will be a hot or I'll be giving alot way.

The thorns on the buffalo berry with keep the kids attention. I have some buffalo berry's but have not even been over to look at them. I have never had rhubarb jelly. What farmers market and what days? I may need to try it. I am not a rhubarb pie fan. But I would try the jelly. Don't be hoping for frost.

I used to make jalapeno jelly that wasn't Spicy at all. Flavor made you think it was going to be hot , but not even as hot as a cup of warm coffee. People loved it with cream cheese , even those that liked Spicy food. Just stripped all the seeds and white membrane out and ran through my juicer. Got the cups needed for a batch ( following the dry pectin package back then for amounts of each ingredient ) vinegar was added for acid, like any pepper jelly or jam. You may be able to use citric acid. Haven't made any in years , but might do a batch for fun. It was good on a steak as a marinade for grilling.
