I finally gave in to the pellet smoker craze couple months ago when the bottom of my gas grill fell out. (Someone will post the pic of the guy in the daisy dukes now). Anyway, I kept reading how brisket gets messed up and how hard it is ect but finally did one. We ate the flat, still waiting on the point (195 as i type this) but that thing was AWESOME. So if youve been putting it off cuz the inet says its hard, dont listen. Better than anything ive had at a restaurant, and ive tried a few.

Briskets are easy, on a electric smoker you pretty much set it and forget it. I like mine Texas style, just a kosher salt and black pepper rub, Smoke until internal temp of 165, wrap and smoke till internal temp of 195. Let rest and enjoy.

Briskets aren't to difficult just time consuming. It does help having a consistent cooker, and pellet or electric are more consistent, without huge fluctuations in temp.

Ya i dont know why theyre portrayed as this impossible feat on the inet. Lots of websites about something simikar to “10 ways to not mess up your brisket” ect. Only frustrations ive had are the 2nd stall on a pirk butt or this last piece if brisket. I even put this thing on at 7 am. Might be doing some midnight smokes real low.

I often put brisket on the night before I plan on eating it. 17 hours was what the last one cooked/smoked.

I like to use wood. I think it tastes better. Get a few beers nice and cold. buy yourself 3-4 good cigars. Get a nice comfy lawnchair and put the smoker in the shade. I usually build my fire about 3 a.m. Got some nice coals and right temp about 4. Put the meat in. Time to eat about 6-7 p.m.

I have a 40 lbs bag of pit boss brand gourmet mix or whatever its called, says its good for all meats. What are good brisket or beef specific pellets?

Like has been said they take time, fone one yesterday about 12 hours.

Granddaughter in law said they got some big chunks of pork when they butchered called pork butte she didn't know what to do with. grin grin I told her to bring them to me I could figure out something.
