What exactly am I looking at? You are looking at a gallon jar filled with rum, sugar, strawberries , cherries ,blueberries ,raspberries,blackberries, raisins and orange filets. and a couple of vanilla pods. I started it with the first fruit of the year .... Strawberries and went on through the season adding others. You can add whatever you like taste wise. This is the way I like it. And as its all fruit, it must be ever so healthy. Loaded with vitamins and stuff. Its great over vanilla ice cream.

I am guessing that there is no fixed recipe for this one and everyone literally makes it up as they go along. Thats what I do. Again, that depends. For me, I use 2 cups of brown cane sugar. But you can use the white stuff and adjust to your taste. Obviously, one needs to do a lot of taste testing to get it right I have eaten way to many peaches in my younger years to still like them ...soooo.... no peaches

Very nice Scuba, we take homemade Concord wine while it's still working a bit and add cherries. This is put in a two liter plastic bottle in the fridge. Every day for two weeks to a month crack the cap and let the gas out. After that it is done. We call it cherry bomb. Your rumpot concoction looks fantastic. I bet sipping some of that will warm you right up. Do the orange rinds also taste good after a month or so of marinating?

I use a non spiced Jamaica rum ..some years high test, others the normal 42%
If you have a jar that closes good, it will keep a long time. Mine is usually gone by the end of the winter though. Maybe if I made a bigger batch I could test how long it keeps.
Does anyone have a 5 gallon jar for me to do a test ??
I don't put orange rinds in it. Just the filets with nothing left on them. No rind , no skin , no pips.
