The wife and I cooked some of our walleye tonight from our Canada fishing trip. Always brings back great memories and the taste never gets old.

That sure looks good.

I hope to have some of that soon as we have a walleye fishing charter on Lake Erie booked for this Sunday. I have never fished for walleye, or eaten it. So I am hoping for a good day so I can find out what its like.

That looks like beer batter for the coating.
IMHO it's the best if thin so it doesn't mess with the flavor of the fish.
Just enough to fry it and hold it together.

Nope, just Drakes and Kentucky Kernel seasoned flour in a 50/50 mix dry breaded, no wet batter. Makes a very thin covering unlike a greasy batter coat.

I would eat that right now. I prefer my home made tartar to the store bought.

I still have some Walleye in the freezer a buddy just brought down a couple weeks back. I am gonna save it for more pickled fish. Mine is all gone and I miss that flavor and texture every day.

I love walleye! I grew up hitting the crappie ponds every spring and down here on the 3rd coast, I eat a lot of flounder but I think walleye is as good as any of them.
