I ended up with delicious pig in my freezer.

I would like to try curing , and smoking it myself.


Do you guys have a favorite cure recipe for hams, and bacon?

Of the couple different different bacon recipes I’ve tried, this is the crowd pleaser. I hate sweet bacon and this is not sweet bacon. Only thing I don’t like about it, is its name. a little too hipster for me.

Great Sausage Recipes and Meat Curing by Rytek Kutas. It is a great book. I got my copy in the mid 1980's. It has 100's of recipes in it. It seems like there is even one for fish sausage.
sausagemaker.com has it along with spices, mixes, casings, grinders.

That book, along with spices, and supplies from the Sausage Meier has been great for me.

I did not look for a copy, I knew they had them at the sausage maker site. It is a good book. I would say one of the better books on sausage and curing.
