Great Sausage Recipes and Meat Curing by Rytek Kutas. It is a great book. I got my copy in the mid 1980's. It has 100's of recipes in it. It seems like there is even one for fish sausage. sausagemaker.com has it along with spices, mixes, casings, grinders.

Thank you everyone. Mark I found an old copy of that book on fleabay for $20 I did not look for a copy, I knew they had them at the sausage maker site. It is a good book. I would say one of the better books on sausage and curing.
