Not something I've eaten but yeah clean them really good remove the nails eat it down to the bones. Think I've seen in a few Asian countries they do them so they get kinda jellied. Think ive seen them fried before but don't seem like a great idea, but they look pretty good stir fried like in Thailand. O and their pretty famous in Trinidad and tabago in a soup if I remember right YouTube expert
