Best behavior, I've learned that the cajuns can be the best folks you ever meet but they're kind of sensitive about their culture and way of life. Some take offence easily so whatever you do don't be rude.
I once used the term coonass in a joking way and near bout got my tail whipped for it.
The guy that had the top bunk of our beds in basic (Ft Jackson SC) was from Monroe Louisiana. We have lost touch through the years but he was of the finest people I have ever met. My buddy said there is a distinct difference between a coonass and a Cajun. If you don’t know don’t use those words. I was supposed to go see him while on leave from Ft Sam Houston but someone broke into my locker and stole the money I had saved back for the trip. Never made it. This will be my first trip to the state.
If he was from Monroe, he probably wasn't a cajun. He was just from Louisiana..trust me..there's a difference. I'd say that probably 2/3 of the state won't fit the description. I'm sure a lot of you have seen the show Swamp People. If you watch this; you get the impression that all we have is bayous, creeks and swamps. The largest industry in the northern part of the state is pine timber and they don't grow well in water.
Something else you might notice is there is a difference in cajuns or coonasses as you might call some of them and Creoles. They are found in small pockets through the lower portion of the state. I don't know if it's true or not but have heard that the creoles and Cajuns cook differently. Perhaps one uses more or different spices and the other cooks more in a gravy.
