Here's what we had last night.
In a large kettle add oil, garlic and onions heat until onions are transparent. Add barley, carrots, zucchini, cabbage, water,parsley and bay leaf bring to boil. Simmer until barley is tender. Add sugar, salt, pepper, and tomatoes cook 15 minutes longer then serve.
Tonight I think she's making a spicey italian potato kale soup.

I have meatless recipes I like but only ever made it a month meatless
spent the first 2 and a half weeks on the pot , Enjoy
did it just to prove I could which should give you some idea of what my normal diet looked like a the time.
black beans and rice
stir fry
ratatouille
meatless spagetti
tacos with re-fried beans instead of meat (make sure you get the meatless refritos most have lard)
fish , fish , more fish thats catholic not meat.
fried eggplant
tomatoe soup
lots of different sir fries
roasted roots , carrots potatoes , parsnip , turnips , rutabaga cut into even sized pieces , toss in oil put in a big cast iron skillet in a single layer sprinkle with herbs and roast at 450 in the oven

I've yet to have fried eggplant that was decent.
Lots of bean burritos for lunch. Bread eggplant like fish (flour, then egg, then saltine cracker crumbs) and fry in hot Crisco. You will like it.

Not catholic, but I find it very interesting that the pope has given beaver and muskrat the A-O-K during lent.
Save veggies for side dishes. Eat beaver!
Maybe frog too! Don't several south american countries have a huge problem with beaver right now two birds one stone , encourage people to feed themselves on a pest plaguing the environment.
