Just looking for some recommendations on making jerky, if anyone has any favourites they are willing to share. This is my first attempt and just picked one off google that sounded like it might be good lol

For a pound-1.5 of meat

5 oz apple cider vinegar
5 oz Worcestershire sauce
5 oz soy sauce
2 oz liquid smoke

Place liquid ingredients and meat in a gallon freezer bag. Lay bag flat and work most of the air out as you can. Place bag in the refrigerator(may want to place a cookie sheet under the bag increase you dont seal the bag well), for 12-24 hours

Then:
Drain meat and place on dehydrator racks. Season with your favorite spices. I prefer cajun seasoning(which you can buy or make).

You can make cajun seasoning with:
Onion Powder (or salt)
Garlic Powder(or salt)
Seasoned Salt
Chili Powder
Cayenne powder

If I go the making route, I usually just sprinkile the jerky with the above as I go. Dont stack the trays on top of each other as you season...unless you want salt sticks as the bottom tray will be extremely covered by the time your done(which is my favorite tray usually lol)

I use the Original flavor spices from Nesco/American Harvest and it's great. Also use a Jerky Shooter from Nesco/American Harvest. Dehydrate for 2 hrs on each side. Good stuff.

Not a recipe, but if you are making large batches invest in moisture absorbing packs to put in bags or jars. Usually I get the jars very hot, put a few packs inside with jerky and it will seal the jar. This makes keeping it fresh much easier and I can process a lot more at once.

Try vacuum sealing and adding the packs. It really makes a difference.

This one has been my go to for about 15 years.. for 3 # sliced meat
2 tsp salt
2/3 tsp msg
1/2 tsp accent
2 tsp liquid smoke
1/2 cup worcestershire sauce
1/2 cup low salt soy sauce
2 tsp onion Powder
1 tbs coarse black pepper
1 tsp garlic powder
1 tsp hot sauce optional
Marinate overnight
I use a dehydrator can also be done in a smoker or oven.

Everone likes something different find one try it modify to your tastes. I add extra garlic and lots of crushed red pepper to mine and smoke 1 to 2 hours till done. I dont care for or eat lots of peoples jerky because its too salty, dry, or sweet.

Recipe for 4#
1 tbsp season salt
1 tbsp garlic powder
1 tbsp black pepper
1 tbsp onion powder
2 tbsp crushed red pepper
2 tbsp molasses
4 tbsp soy sauce.
I use ground meat and a jerky shooter for this recipe and may doctor it up a little more depending on who is going to eat it.

Look up Doc's jerky on google. One of the better ones I've tried


Been here since 2008, but had to register again because of the 2010 crash!

Jerky Marinade
1 – 16 oz bottle Dale’s marinade (Walmart sells it)
16 oz water
1 TBL pepper
½ TBL garlic powder
½ TBL onion powder
¼ cup plus 2 TBL brown sugar
2 TBL liquid smoke
1 TBL cayenne
¼ cup Worcestershire sauce
1 tsp curing salt

Add all ingredients to bowl and stir to incorporate. Pour over 5 lbs meat in gallon ziplock. Put in fridge and marinate for 8-12 hours turning occasionally. Dehydrate at 135 degrees for 6-8 hours.
