I put about a cup of sodium benzoate in hot water and then added it to a gallon of fresh ground meat. My question is should I leave the lids of my jars loose for storage? Wondering about building pressure but would rather have the lids tight.

Yes, leave them loose. The meat will continue to expel gas until the sodium benzoate kills all the bacteria in the meat. This isn't done immediately. It may take up to ten days or more depending on the size of the chunks of meat and temperature. I like to stir it once a day until it has settled down.
