Use to dehydrate whole or in large pieces now I dice them up first then dry. Works a whole lot better when adding them to soups and gravies. My favorite way to fix'um now, saute green pepper, onion and garlic bits add dry mushrooms and a little water to soften mushrooms and cook off water this get the flavors mixed together then add this onto a philly type cheese steak sandwich. some real good eating there.

Lions mane was tasty. Can’t really say it tasted like crab meat or lobster though as some say on the internet.. Found it about ten feet up on an old maple tree. It’s one of the few that are easy for me to identify. I found one last year as big as my head on a Mimosa tree of all places.

Best year ever for oysters, black trumpets, and sheepshead around here. Many pounds of the oysters and sheepshead in the freezer. Lots of chantereles and chickens too.I don't like chicken mushrooms and have had poor luck freezing and drying the chants.

Just found my first lions mane about half an hour ago. The wife is cooking it with the walleye she was planning for lunch now. Yum, Yum.

I may try to freeze some too. I got 4 quarts of dehydrated now so may try something diffent. I like morels a lot better but oysters are decent tasting to me. I have never found any chickens or hens, and don't know what sheep heads are. I Googled sheep head guess them and hens are the same. Neaver have found any.

Around here sheephead, rams head, and hen of the woods all names for the same mushroom(Miatake Grifola frondosa ). They grow at or near the base of oaks.
Chicken mushroom is also called Sulfer shelf and is not the same as the miatake. It's orange and grow like a bracket from stumps.

My apologies Matt.....I had a brain fart and misspoke. Sheeps Head and Hens are usually one and the same.
For some reason I saw Sheeps Head but thought Bears Head or Bears Tooth Head.

Sorry

Hens are the best mushroom I've ever eaten. Absolutely fantastic.
I won't even pick chickens anymore, they are very bland and taste like old dried out chicken.
