I love aged brick. Used to really like Widmers but the last two batches something was off.
What’s your favorite brand?

I eat a lot of cheese but I'm no connoisseur. Swiss, pepper jack and muenster are good, don't care for sharp cheddar all that much. Had some cheese curds at camp last summer that were really good.

Try taking it out of the original packaging and wrapping it in saran wrap the day before you eat it.
Sometimes that will allow off flavors to dissipate.
Decatur Dairy, Buholzer Brothers (Klondike), and Country Castle (Chalet Co-op) all make pretty good brick.
Being such a high fat and high moisture cheese, finding a brick that ages well can be pretty hit or miss.

Appenzeller, gold. What can I say, I'm Swiss. Made down the hill from my Grandmothers homestead in Appenzell Switzerland.

I like William's extra sharp Pinconning cheese. They are out of Pinconning, Mi. I also used to buy this extra EXTRA sharp cheddar from a little cheese place south of Lakeview, Mi., called the Farm Country Cheese House. It was aged for 4-5 years. My word it was good. Some of that stuff you sorta let melt away in your mouth instead of chewing it all up. There is a place in Ontario, I cant remember where, called Black Diamond, their extra sharp cheddar was excellent also.

I buy x sharp cheddar on sale, put a date on it roll it over in passing pantry. Leave untouched yr. or 3 always has good bite. Does take time like country store cheese. Tut

Try some Balderson, old, cheddar ,made in eastern Ontario. Get at Cosco . Good stuff. old243

X2 on Pinconning.Every time we get down state I make a detour off I-75 and pick some up.Love the extra sharp too.

I think the question was specifically about Brick cheese........

With relatives in WI, we visit a few times a year......best and most reliable source I've found comes from these guys.....

Have no clue who makes it. They just have big slabs of it and they carve off as little or as much as you want. I have a pound of Medium in the fridge now.

Have often wondered if aged Limburger......the stuff way out of date......couldn't be used as bait for something. Used to be a guy in Iowa who made a killer catfish bait out of it. Sonny's Super Sticky?

I am a cheese fanatic. I like all cheese including many of the ones posted on here
But if you haven’t had a good aged brick that stinks the fridge up without being open
You haven’t lived lol. Now back to the aged brick, anyone have a favorite? I have had
Verns that was very good too but lacks consistency.

They sell river rat cheese in most stores around here, I'm a couple hours away from Syracuse .... Crogan bologna is good but I prefer venison sticks from tri town packing ...

wenger springbrook cheese in davis Illinois has great cheese and they are local to me and I like supporting the local guy as much as possible plus the brick cheese is great!

I also agree with gary benson about smoked cheese. I just recently started smoking cheese and so far all has turned out great.
