What's a good bait to put in a pocket set for mink?

hand size hunk of carp pinned up out of the water in back with some grass over it.

Serious minkers here use suckers(cut in 3rds),caught during the spring run and frozen til fall

Jack mackerel for the smaller jobs a bucket of carp steaks for the bigger jobs.

Best bait I ever used was salted bulkhead. Thought about eating myself they smelled so good and that was after they had been in the pocket set for 10 days.

Another skinned mink carcass cut up pieces, especially the liver. Ever notice that is what they eat first when they find a trapped mink the liver area.

Sucker is good bait, if a fella takes the time to get some. Muskrat is what I'll use though, but you have to go rat trapping first, lol.

If I was to concentrate on mink instead of rats, I would make sure I stocked up on sucker , bullheads, and save any tulibbees from winter ice fishing. Muskrat carcasses get freeze dried if you try to store them for a year .
