So, we had some accessible forest fires and the morels are crazy this year.

I picked 6lbs yesterday and need help with preserving them.

earlier in the week, i picked 2lbs and I dehydrated 1lb, and i also sauted 1lb with some butter and garlic, and then froze them.

I have 2lbs of yesterdays batch in the dehydrator.....

at some point, I would like to make a bunch of raviolis with the mushrooms, but dont have time to do it now.

what is the best way to preserve the other 4lbs?

should i just dry them all and then cook them when i am ready to make the ravioli?

Is sauteing them and freezing an okay method?

I like to dehydrate them, but I got some from a friend that put them in ice cream buckets with water. They tasted ok kinda mushy. You could batter them with seasoning and flour and lay on a cookie sheet then freeze and then put in a bag. I don't see why saute and freeze wouldn't work.

I dry them and then vacuum pack them in portions. They keep for a long time like that and make some nice grub once deer season is back

Take your heavy needle and string you use for sewing up pelts. Lace the morels up into a garlon . Hang from the ceiling. They will dry perfectly. When you need some for cooking reach up
And break a handfull off.
I have also used a plastic needle and yarn when at my daughters.
If you don't find too many, just drop
Them into the ashtray of your truck. Find them in 6-8 months and drop them into a pot of stew. In other words, dont over think the fungus.

Last year was a great year for me,so I tried several methods. One that hasn't been mentioned is to roll in flour then freeze in ziplocks or vac pack. Don't thaw before cooking just put them right in hot butter. Not as good as fresh but not bad.

Cut in half and clean them, let dry and them place individually on cookie sheets and freeze. When frozen place in bags for future use.

Dehydrate them and put em in canning jars with a vacuum seal or you could box em up and mail em to me to properly dispose of them.

we clean them, lay them out and make sure they are dry then freeze.
