Pickles - 06/30/20 11:54 AM

Good morning Everyone.
Just wondering who makes crock pickles? I bought a 2gal crock recently and have made 2 batches of pickles. It is a simple recipe that came with the crock and very good. Salty, crunchy, and ready in about 6 days with this weather.
Next up is either sauerkraut or fermented jalapeņos.

Don't use a crock but planning to do a batch today in gallon jar. More what my mom called refrigerator pickles but I like them so always make couple gallons.

Never thought about fermented jalapeņos. Sounds good. Could you please give more details and directions. Thanks.

I don't even know how many pints and quarts of jalapeņo dill pickles we have put up so far this year. I just sold a quart and a pint.

I bought the crock from Ohio Stoneware and they sent 2pgs with several recipes.
Here is the fermented pickle recipe:
4lbs of 4 inch cukes
2 tbsp of dill seed or 4-5 heads fresh dill
1/2 cup salt
1/4 cup vinegar
8 cups water
Optional...garlic cloves, red pepper flakes, and pickling spice
6 days in brine and my pickles were to taste. Yours may vary

The fermented jalapeņo recipe:
15-20 fresh peppers
2 dozen garlic cloves
1/2 red onion sliced thin
3 tbsp salt
4 cups water

Can't wait to try this one

Today's project did the smaller cucumbers with Mrs Wages dill pickle mix..Also found enough green bean in garden to stuff a pint jar full of them.
I used this mix first time couple years ago and turns out ok. I dumped some minced garlic in a couple jars and added fresh dill weed from garden.

Garlic is highly recommended.
I canned enough dill pickles last year to last a lifetime. I don't think I'll ever crave another.

My wife has always used Mrs Wages, but I'm big on "homegrown" so maybe we can utilize some of your recipes...thanks

Mrs. Wages is hard to beat. Everybody loves our pickles and it is as easy as opening a packet.

Buy a fillet of salmon. Cut the fillet into 3 or 4 pieces and soak in a salt brine till it tastes salty. Slice the fillets into small pieces and add them to your next pickle batch!!
Yummy

That salmon idea is worth a try. I started another gallon yesterday so I have to wait for them to finish. I really should get another crock. Also started canning...Hot cajon watermelon rind relish
