Beef with bacon, any combo will work. I love beef, but we eat pork as something different fairly often.

Re: Pork or beef? - 10/11/20 10:36 PM

Both are good. Beef is my preference but pork is a close second. Crab, clams, scallops, and oysters are third.

T-Bone for me, but I do like my venison. A ham bone in bean soup goes a long way.

Re: Pork or beef? - 10/11/20 11:11 PM

Like about ANY meat but prefer pork. Good shoulder steak is hard to beat fried with taters and milk gravy on the side.

Re: Pork or beef? - 10/11/20 11:12 PM

I like a variety.

Nice ribeye salt and peppered from a corn fed let carcass hang about three weeks 1100 pound black whiteface steer cooked medium rare on a bed of coals from a mesquite wood fire is the envy of the free world.

Re: Pork or beef? - 10/11/20 11:21 PM

i got to say though a nice pork shoulder or loin cubed up and turned into chili verde is mighty tasty.

I made a big batch of green chili last weekend. Roasted anaheim chilis with a couple poblano's tossed in for good luck, on the cook stove. I turned the fire up high and using tongs roasted them, one at a time, in the fire. Then used a mapp gas torch to finish burning all the peeling till they were black. Put one of the screen things in the sink drain and washed all the blackened peeling off. Chopped them up real fine. Put a 1/4 cup in a ziplock sandwich bag and froze all the little baggies. I really like that stuff. Nobody here in KS even knows what it is so can't buy it here. Whenever I get a chance I will buy a case of it. Senor Peno's is my favorite brand.

Mix that green chili with some roasted in the broiler and peeled tomatillo's that been pureed with a little cilantro. Brown the pork cubes with chopped onion and thin sliced garlic in a cast iron dutch oven with olive oil, pour in some chicken broth add the green chili, tomatillo's and cilantro. Some salt pepper and cumin is good. Let it barely simmer 3-4 hours till the pork is falling apart. serve it on rice.

Mighty fine meal

P.S. the best part of that green chili is the peppers were gifted to me by a friend. Goes by bigfoot on here. Thanks again Mark

Re: Pork or beef? - 10/11/20 11:52 PM

Bone-in ribeye is tops, then a T-bone. Filet of tenderloin has it's place as well.
Bacon and sausage and some ham is good. Pork steak is right up there too.

Re: Pork or beef? - 10/12/20 12:59 AM

From my perspective I can enjoy more different cuts, products, tastes etc. from pork then beef. I eat both and enjoy some of the recipes we have put together for slow cooker pork steaks and other cuts. To me there is more consistency in the texture of pork then in beef. Also from an economical aspect we have some really great sales on pork more often then beef.

Re: Pork or beef? - 10/12/20 01:12 AM

We just had 2 heritage hogs we raised and a Steer butchered.

730# s of meat in our freezers. We sold 3/4 of the steer to cover butcher fees.

Depends on the night what we're hankering for. Pork steaks are my favorite though

Re: Pork or beef? - 10/12/20 04:22 AM

I generally prefer to eat herbivores over carnivores or omnivores. I think it's probably just a little healthier? Although life without bacon would be pretty sad.

Re: Pork or beef? - 10/13/20 12:35 AM

I like to take a whole boneless pork loin and slice it not quit through about every 3/4 of an inch. Open up the slices and one at a time add salt pepper garlic and a hint of cayenne, lay onion slices on top, then wrap it up in heavy tin foil and smoke it at 200-250 for 6-8 hours. keep water in the cooking chamber so it is nice and humid in there. wrapping it in tinfoil keeps the smoke from being overpowering and the meat stays moist. I have also cooked them in the oven. I sprinkle Worcestershire sauce in all the cuts when i do one in the oven. in the oven i cook for about 2 hours at 350

I could eat a rare porterhouse, ribeye, or filet everyday.
I wouldn’t pass up a pork steak or dry rubbed ribs though.

Re: Pork or beef? - 10/13/20 10:41 AM

that food pyramid was obviously created by oprah winfrey or her staff.

On the bottom should be beer . pecan pie and ice cream go in the same box. tacos are snacks and need left out

only a liberal would leave beer out of a food pyramid
