Made some more eggs and peppers. [Linked Image]

Top pic the variety of pickled eggs and peppers
Large jar is basic spicy pickled quail eggs
The pint jars from right to left all pickled

Jalapeno and carrots bo eggs just peppers
Habaneros and ghost peppers no eggs
Scorpion pepper eggs
Ghost and habanero eggs
Ghost pepper eggs
Habanero eggs
Smoked eggs
Mild eggs

We pickled quail eggs years ago when I had a bird I raised quail to feed the bird.

This is a pellet smoker and i use a somke tube for added smoke. Its just a perforated metal tube you fill with pellets and lite with a torch and let it smolder. I used it to cold smoke the eggs and for xheese and the like

did you make the smoker or buy it . i ask because i have been thinking about building one my self

I bought it. Its a pit boss copperhead 7 vertical smoker. It have done 2 whole briskets and 4 pork butt all at once on it. I really like it. I would have a stick burner but not any local qood for smoking in Nevada

Looking good ! What’s your go to pickled egg recipe?.......I have 11 new birds just starting to lay...the eggs are building up....and I need to pickle !

Trapset, yes ill keep them in the fridge but with all the vinegar they would be ok on the counter for a while.

Savell, thanks. The wife brought it home its called 19 crimes and if you down load the app it tells you a story. I think she might like ol snoop dog lol. She is a cali girl.

I basically used the quick dill recipe of the mortens box but made my own prickling spice as i dont care for clove or cinnamon in commerical mixes.
4 cups white vinegar
2 cups cider vinegar
2 1/4 cups water
3/4 pickling salt
1/4 cup sugar
2 Tablespoon whole pepper corns
2 tablespoons whole mustard seed
1 tablespoon allspice
1 tablespoons dill seed
1 tablespoons coriander seed
Couple bay leaves

Bring it all to a boil
Let cool and pour over what ever you have in jars
I did eggs, garlic cloves, jalapenos, dill , onions in each jar but i did mix up my peppers some lol

Just broke into the eggs and peppers. Great flavor ill add twice the sugar tho next time. But those peppers will blow a guys head off. Some of them are hot
