It is a perfectly cooked dry aged ribeye seared over hard wood down by the clearest river I've ever seen.

I never planned on likin Michael much but I dont want to see him break his last tooth on an over cooked hunk of beef

No doubt the aging process is good, but there is no excuse for burning such a fine piece of meat. shocked Lighting huh, I don't think you should be giving scuba any grief over burning a steak again. laugh

Don't yall worry that is part is taken care of in the searing process. Anybody procreated there just added some protien.

J/k that big freeze was hard on the bugs. None out yet. Besides flies are basically good neighbors compared to fire ants and scorpions which I usually have to avoid in the hill country

JP, surely even a Canuck knows that beef is cooked a little different than fish... or maybe you do it all the same there.

Looks good Lefty. I'd take a tad more red, but we'll blame it on "Lighting". Sure...I can still respect a medium man.

Boco, have you ever heard of Canadian cuisine?.......neither have I.
I about starved to death driving across western Canada one winter. It got to be a running joke between my buddy and I, we stopped at a lot of roadside restaurants and cafes, and everyone of them served the most overcooked, blandest "food" I have ever had to subsist on.

I guess you never ate sagabon geese,or nemestik.
Great food where I am.Fresh fish is fabulous.Smoked sturgeon is unrivalled.Moose is regularly on our menu.
I travelled out west with a cousin from Ireland who regularly travels the world(including many trips in the USA),he said some of the best beef he ever ate was when we were in Alberta.
When I was in NY city a few years ago I could hardly eat the food it was so bad.

Meat shouldn’t be cooked past medium. Unless it’s bear for trichinosis reasons!!

Just give the beef cow or venison a tour of the kitchen. No need to leave it on the heat past rare.



Same with wild duck or goose. Medium at best, cook to medium rare and let rest until medium.

Most jerky tastes good, even them nasty old rutting bucks provided you use enough salt and seasoning. This thread was about good aged-rare beef, not jerky. If you don't have some nice juicy red or maybe even pink beef pics to add, start your own jerky thread and quit trying to derail this one. crazy laugh

A steak that some airline folks made for you on a plane. There is zero other reason ever to use a plastic fork. I mean really, don't you folks in TX have the technical know how to little a point onto a stick and have to use plastic forks to eat with or are you taking classes in how to use cutlery at a table and they are not sure that you can be trusted with the real thing and still have your training wheels so as not to injure yourself ???? Plastic forks.....whatever next ???
