Started the roux for moms gumbo , looks good so far.

The color of the roux, its darker then it looks

Mine too may not be 100% traditional when I'm done but will taste ok.

I much rather have it than not, but I sure won’t let not having it stop me.

In my opinion, having a little bit of a lot of things is what makes it for me. A little chicken, Tasso, A few frog legs, a little sausage, and whatever other smoked meats make it in.... a little hot sauce, a little okra, a little Worcestershire sauce, and broth instead of water.... mmm

Yes, I love potato salad with it but sweet potatos are great too.

For my gumbo, I want EGGS. Not boiled, peeled and dropped either. Crack em and drop em in.

Man, I’m cooking gumbo this week. It’s been a while

I'm also either or on okra but if it's without it better be good as I like okra any way you fix it.

Me too. Smothered, pickled, boiled, in a dish, I’ll take okra anyway it’s offered.

Definitely okra and file powder.

Never tried potato salad other then on the side may have to make some tomorrow.

Simmer for couple hours

Added the shrimp and topped with rice. Mom made bread

Great time together

That looks Delicious....use to make jambalaya...was always a hit. But it’s made by a Yankee....so it’s probably not up to snuff with the Cajun folks
